As the proud owner and master distiller at Denna Lake Spirits, George championed the creation of authentic, locally-sourced spirits serving bars across Toronto, the Kawartha Lakes, Haliburton County and Minden Hills.

 

George’s expertise extends beyond distillation. From managing upscale Italian restaurants in Toronto to transforming struggling lounges into bustling establishments in Scotland and New Zealand, he consistently drove success through innovative cocktail menus, staff training and exceptional customer service.

 

Whether it's creating an organic cocktail menu to match a lounge's theme or pioneering a unique style of on-the-spot cocktail creation, George thrives on challenges that push boundaries and elevate the bar experience. His track record speaks for itself, with alcohol sales increasing by 25% at Timbers Ristorante and selling a staggering 8,000 cocktails in a single month at No. 40 in St. Andrews.

 

Beyond operations, George had the privilege to share his passion and knowledge as a bartender instructor, working closely with wine makers and participating in mixology nights that celebrate the art and history of cocktails.
